Deliciously Simple Guacamole

Guacamole. Simple, beautiful, delicious. What else is there to say? There are far fancier and more complicated versions to be made, but this is the one I whip up in 3 minutes during a commercial.

IMG_7480Ingredients:

  • 2 ripe avocados, pitted and scooped (set pits aside)
  • 1/2 a medium onion, white or red, diced
  • 2 medium tomatoes, diced (or if you have it, a good spoonful of salsa)
  • fresh lemon or lime juice to taste (usually half a lime squeezed for me)
  • a wee bit of salt

Directions:

  • Mash up your avocados in a bowl with a spoon until they are nice and smooth (or, leave a few chunks if you like it like that)IMG_7482IMG_7483
  • Mix in the rest of the ingredientsIMG_7484
  • Taste and season as needed

Eat it right away with salty nacho chips or refrigerate in an air tight container with one of your avocado pits set into the middle of it to slow the browning process.
